driving San Diego, CA to Bloomington, IL… what to see and do along the way?

I will be driving from San Diego, CA to Bloomington, IL the end of Nov (taking the southern route through AZ, NM, TX, OK & MO). I will probably be staying the night in Flagstaff AZ, Amarillo TX and Springfield MO… can you suggest any spots along the way that are must sees? Doesn’t matter if they are beautiful environmental must sees or ‘the worlds biggest ball of yarn’ must sees. Also, if you have any suggestions as to great places to eat (even dive restaurants) that would be very helpful. Thanks so much!!! I wish you all the best.

Go I-40, it is originally hwy 66, you will see flagstaff( gateway to Grand Canyon) and volcano sunset crater, meteor crater, and petrified forest and dinosaur’s trace, and gallup in NM is indian capital, you may want to visit Santa Fe and Laos, it is artist place, then from I-40 to I-44, a lot of unique style motels along the route for about $30 to $40 per night.
